| This has been a favorite ever since I decided to go fully vegan. Although I don't cook quite as much as I initially did back then, this recipe has stuck with me. You will need a good kitchen blender to make these, but the result is amazing for being so simple imo.
400g Chickapeas (soaked/boiled and ready) 1 Onion 1-2 Cloves Garlic 2 Tsp Cumin 1 Tsp Corriander 1 Tbsp Maize Starch Salt, Pepper to taste
Basically just put all of it into the blender and mix until you have a nice paste. I usually make the falafels as small flat disks rather than balls. Preheat the pan with oil. Put in your falafels when the pan is really hot and fry them on each side until they are golden brown. Serve with some Ajvar Relish or whatever you prefer. Nomnom!

| Seems to be yummy, always loved a homemade falafel
Here in Jordan, falafel is like a traditional dish. You should visit some time and have the real deal, small shops; street food ^^ Although I heard that the best ever falafel & hummos is in Palestine. Guess I'll never know :P
