| 3 Large free range eggs 115g plain flour 1 heaped teaspoon baking powder 140ml milk pinch salt 2 knobs butter 3 tablespoons caster sugar 4 banana's creme fraiche (optional)
Separate the eggs, putting the whites into one bowl and the yolks into another. Combine the plain flour, baking powder and milk with the egg yolks and mix until it forms a smooth, thick batter. Whisk the egg whites with salt until they form stiff peaks. Fold the whites into the batter. Heat a nonstick frying pan, medium size burner but on full. Pour some batter into the pan ( I do 3 at a time). Fry for a couple of minutes until golden then flip and cook the other side. I stand a plate on top of the stove and just pile them all up, they stay warm enough being close to the heat.
Melt the sugar in a sauce pan - takes a bit of practice. Don't move it too much but also, don't let it burn and don't get it on you! Move the sugar by moving the pan, if you put a spoon into it, the spoon just gets glooped up. Once it is starting to colour, add a big knob of butter and swirl it all around. Peal your banana's and drop them into your sauce, cook for a couple of minutes (depending how ripe your banana's are).
